Easy Pork Belly

This recipe only takes three ingredients

Serve this up at your next meal as a main or entree. Super tasty and flavoursome pork belly is a crowd-pleaser!

Ingredients

  • 1.3-1.5kg pork belly
  • 2 tsp salt
  • 2 tsp fresh cracked pepper

Instructions

  1. Preheat the oven to 220c and place a wire rack into a roasting tray
  2. Using a sharp knife, score the skin into 2.5cm strips, only deep enough to break the skin. Try not to cut too much into the fat, and do not cut into the meat.
  3. Turn the pork meat side up and sprinkle 1 tsp salt and 1 tsp pepper over the meat and press it in.
  4. Turn the pork skin side up and sprinkle 1 tsp of salt and pepper thoroughly over the skin and press in.
  5. Place the pork belly on the wire rack and place the tray in the oven.
  6. Roast for 30 minutes at 220°C and then turn the temperature down to 160°C. Allow the pork to roast for another 25 minutes per 500g or until it reads 62°C on a meat thermometer.
  7. Once the pork belly is cooked, remove it from the oven and cover with foil and rest for at least 20 minutes.
  8. Carve the meat and serve
