Choc Honeycomb Muffins

Ingredients

  • 2 cups plain flour
  • 1 tsp baking soda
  • 1/2 cup caster sugar
  • 1 cup dark chocolate chips
  • 100g choc honeycomb (roughly chopped)
  • 1 egg lightly beaten
  • 70g butter melted
  • 1 cup buttermilk
  • 1 tsp vanilla essence

Instructions

  1. Preheat the oven to 175c.
  2. With muffin liners line the 12-hole muffin tin.
  3. Sift flour and baking soda into a bowl, add the sugar and stir.
  4. Add in chocolate chips, honeycomb, egg, melted butter, buttermilk and vanilla essence mix until just combined.
  5. Spread the batter evenly into the muffin tin. Bake for 20 minutes until golden or a skewer inserted into the centre comes out clean.
  6. Allow the muffins to cool for 5 minutes.
  7. Transfer to a wire rack to cool.
  8. Enjoy!
