Chicken And Sweet Potato Curry

Fragrant and warm this dish is perfect for winter!

Note: Add rice noodles or steamed rice to this dish.

Ingredients

  • 1 Tbsp coconut oil
  • 1/2 brown onion
  • 1 Tbsp Fresh garlic
  • 1 Tsp minced ginger
  • 3 Tbsp Thai red curry paste
  • 1 Tbsp smooth peanut butter
  • 2 cups sweet potato 9peeled and diced into cubes)
  • 2 chicken breasts cut up into cubes
  • 400ml coconut milk
  • 3/4 cup water

Instructions

  1. In a large pot over medium-high heat add the coconut oil, once hot fry off the onion and garlic. Once fragrant add in curry paste and peanut butter and stir continuously.
  2. Add in sweet potato, chicken, coconut milk and water. Bring to a boil and then simmer for 25-30 minutes. ( or until sweet potato is cooked through and soft)
  3. Serve over a bed of rice or rice noodles.
